Oven-baked Egg Capsicum and Hash

Surprisingly this recipe satisfies perfectly. And I think we can all agree that anything placed into the oven is super easy on hand. Dive into this amazing breakfast meal that suits like no other! Are you ready?

*Preheat oven to 350 degrees Fahrenheit

Start by basing the oven safe dish with a layer of vegan butter to help prevent the shredded hash browns from sticking. Then add a sprinkle of salt to give the potatoes some extra flavor. 

Then, cut 2-3 medium sized mushrooms to put on top of the hash brown. After that place the sliced capsicum, or yellow pepper, into the dish and base the opening with some spinach or greens of your choice.

What you will need…

  • 1 medium sized capsicum
  • 1 free range egg
  • Frozen hash brown mix (this recipe uses the one from Trader Joe’s) 
  • Organic spinach/mixed greens
  • 2-3 organic mushrooms
  • Pink Himalayan Salt
  • Desired seasoning

Once that is done, crack the free range egg into the halve of the capsaicin carefully and follow by seasoning with salt, turmeric, and all of your other favorite go-to herbs and spices. After that is done, you are ready to let the oven do its thing for 15-20 minutes. 

After the hash browns, egg, and capsicum are crisped to your liking, let it cool for about 2 minutes and dig in! Pure maple syrup and organic ketchup work really well with this meal. If you try it out and like it, feel free to tag me on Instagram so I can see your magic at work.
