Who doesn’t like to be both easy and effective in the kitchen… below is a recipe that requires little effort and nourishing veggies!
Healthy eating does not have to be extremely difficult. If you are finding yourself to lack motivation with cooking… just have the oven do all the work.
Pro Tip: Preheat oven to 350 degrees Fahrenheit while in preparation of the steps listed below. Saves time and helps keep the flow going.
What you’ll need to simply prepare this meal…
- Organic Broccolini
- Organic Carrots
- Cremini Mushrooms
- Garlic cloves
- Organic Turmeric
- Extra Virgin Olive Oil
- Pink Himalayan Salt
- Any of your go-to traditional seasonings or herbs
First, base an oven safe pan, used an iron cast skillet for this specific veggie combo, with enough extra virgin olive oil to cover the base. (Avocado oil works great too!) Pouring a little bit at a time and spreading the oil across the bottom of the pan really helps to not over pour and allow for a nice medium thin coat. Then place your washed mushrooms, carrots and broccolini inside the oil based pan(s).
Next, you will want to chop up 1-2 small garlic cloves and sprinkle Pink Himalayan salt, the turmeric, and any of the additional seasoning and spices you want to add. Some good options are lemon, pepper, or oregano.
*NOTE- mushrooms will be ready much faster than veggies. Mushrooms will take around 8-10 minutes at 350 degrees Fahrenheit and will shrink significantly.
Once that is prepped and ready to cook, place these vibrant beauties into your oven at 350 degrees Fahrenheit for around 20 minutes. Making sure to mix and flip occasionally. If you would like a softer roast to these veggie I recommend keeping an eye out on them for around 10-15 minutes extra.
After the time is up, these babies will be ready to enjoy within minutes. Feel free to pair with a side of mashed potatoes or even linguine. Drizzle with some Balsamic or dressing of your choice and VOILÁ!
