PB & Banana Oats!

You are going to LOVE this oatmeal recipe for those days you get carried away with doing a million and one things. 

I say this because this recipe kept my mind off of hunger for the longs hours I spent tidying up for the holidays. If you follow me on Instagram you might’ve saw that I mentioned this bowl lasted me for a full six hours. Now I am not saying it will do the EXACT same thing for you, but it certainly can come close! 

Besides the fact that it will keep you full for a long period of time, thank you carbs and fiber, it was really simple to make as well. 

You can even try this recipe as an overnight fling for a double WIN in the morning, a grab-and-go PLUS its ability to act as good brain fuel. Its packed with protein and makes you happy because of the BANANAS! The granola adds a nice crunch while the peanut butter sauce mixes well with the oats. 

Feel free to switch up the nut butters if you are allergic. This recipe pairs amazing with almond butter as well so whatever you got on hand try it out!

Okay now for real reason you came on this page. Here are the 3 SIMPLE steps to add extra power to your busy days!

Step 1: Prepare the base

Bring two cups of water to a boil using medium to high heat. Once water is at a boil pour in gluten free quick cooking oats. Optional to use plant-based milk in place of the water. If desired, you can sprinkle some salt in the simmering pot for extra taste. 

Once the oats are cooked, set aside to cool and begin Step 2. If you are preparing this recipe for overnight oats, stove top boiling is not necessary. Oats will ‘cook’ or go soft once it soaks in with the plant milk overnight for a different texture and consistency of the base. 

Step 2: Create the nut butter sauce!

Combine around 2 to 3 TBS of pure maple syrup in a little mixing bowl with 1 TBS of the nut butter of your choice. Stir this mixture until you attain your desired consistency. Next, having the oats in a bowl, pour the sauce on top of the oats as a base. 

Side note: Same method applies when wanting to do overnight oats. You have to the choice to let it sit with the base or have it ready for a fresh topping for your morning. If you let sit overnight the sauce will absorb into the base. 

Step 3: Top till you drop! ( not literally, these oats will kick you right back up! )

Once the base is all sauced up,  have fun topping your oats to amp up your spirits while eating it. I know it sounds weird but trust me presentation makes food taste one thousand times better. CHOP the banana, POUR the granola, and SPRINKLE the seeds and cinnamon onto your delicious bowl of oats.
