This one sure is a keeper for everyone in the family to enjoy! This homestyle recipe with oven baked golden potatoes and a veggie egg frittata will DEFINITELY be on the list of family favorites.
Chop, season, whisk, then bake. It can’t get any simpler than that when it comes to making a meal for the whole fam bam… or even just a couple of friends over for a Sunday brunch!
So let’s get started!
Ingredients
- Golden white potatoes
- 3 organic free range eggs
- Organic spinach, mushrooms, and tomatoes
- Seasoning (oregano & turmeric)
- Pink Himalayan salt
- Olive oil
- 100% pure maple syrup (for serving)
Steps for preparing Potato Wedges
Preheat oven to 350 degrees Fahrenheit.
After giving the potatoes and veggies a good wash, start to cut the uncooked potatoes into wedges. (You can achieve this by first cutting it in half and laying the flat side down to then make vertical slices). Next, lay them out onto a baking safe sheet or foil. Then, season evenly and drizzle with olive oil. Mix that around and pop it into the oven for approximately 25 mins or until golden and crisp!
Steps for making the Veggie Egg Frittata
While you still have the oven on…
Crack 3 organic free range eggs into a separate dish. Whisk and set aside. Next, slice the veggies of your choice. (This recipe uses organic baby bella mushrooms, luna tomatoes, and organic spinach). But feel free to get CREATIVE and add in some green, orange, or yellow pepper to add some additional color and flavor to your frittata!
Once all the veggies are sliced, go ahead and add them into the bowl of whisked eggs and give it quick stir to combine the add ins into the egg batter. Then go ahead and sprinkle in the oregano, turmeric, and Pink Himalayan salt. After that is done, grab a mini iron cast skillet and add a base to prevent the egg mix from sticking to the pan. In this recipe, I used vegan butter to coat the edges and bottom of the pan. Lastly, pour the egg batter into the pan and place it in the oven for approximately 15-18 mins or until slightly golden on the surface.
